When our producer told us that she was out of the "sora" sencha we previously carried, she instead shared this nemuri hime sencha. It is crafted from the "koushun" cultivar, a cultivar known for its floral aroma and herbal tea-like flavors. It was first cross-breeded and documented in 1975 by the Japanese agricultural research organization (NARO).

Note that this tea can be fickle to brew; a few degrees too high, and it extracts an overpowering floral bitterness. At the right temperature and brew time, however, this tea is lovely. We found 165ºF with 4 grams to be the sweet spot; using 3 grams can also produce a refined profile. We encourage you to experiment and let us know what you think.

Nemuri hime also translates to "sleeping princess," which we find especially charming.

Senchas are the most commonly drunk loose leaf teas in Japan, making up 70% of the country's tea production. It is usually highly vegetal and seaweed-like in flavor. The most revered senchas strike a perfect balance of vegetal flavor, sugary aroma, bitterness, and astringency.
